Black Beluga lentils retain their shape and al dente texture when cooked. They have a delicate taste and are fantastic at absorbing other flavours.
Lentils do not require it but can be soaked in order to reduce cooking time by about half.
Before cooking, rinse lentils in cold water, pick over to remove debris or shrivelled lentils, then drain.
- Put them in a pot, cover them with about a half-inch of water and bring it to a boil.
- Once the water is boiling, reduce the heat and simmer uncovered for about 40 minutes.
- Check the lentils frequently and add more water if necessary.
- Once you have removed the lentils from the heat, rinse them with cold water right away to remove excess starch and stop the lentils from overcooking. This will ensure the beluga lentils retain their firm, toothy texture that will make them great for whatever dish you're adding them to.
